Prepare the Short Ribs

Season the short ribs with salt and black pepper on all sides.

Sear the Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 4-5 minutes per side. Remove the ribs and set aside.

Sauté Vegetables

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Braise the Ribs

Return the short ribs to the pot. Pour in the beef broth and tomato sauce. Bring to a simmer, then cover and reduce the heat to low. Cook for about 3 hours or until the meat is tender and falling off the bone.

Prepare the Toppings

After the ribs are done, remove them from the pot and let them rest for a few minutes. In a bowl, mix the diced pineapple and pickled jalapeños.

Serve

Shred the short ribs and place them in a serving dish. Top with the pineapple mixture and sprinkle shredded mozzarella cheese and chopped cilantro on top.
