Prepare the Potatoes

Preheat the oven to 400°F (200°C). Cut the fingerling potatoes in half lengthwise and toss them in a bowl with olive oil, garlic powder, salt, and black pepper.

Roast the Potatoes

Spread the seasoned potatoes on a baking sheet and roast in the oven for about 25-30 minutes, or until golden and tender.

Prepare the Green Beans

While the potatoes are roasting, prepare the green beans by trimming the ends. In a pan, heat 1 tablespoon of olive oil over medium heat.

Sauté the Green Beans

Add the green beans to the pan and sauté for about 5-7 minutes until tender-crisp. Season with salt, pepper, and chili flakes.

Cook the Ribeye Steak

Season the ribeye steaks with salt, black pepper, and sriracha on both sides. Heat a skillet or grill over high heat and sear the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness.

Let the steaks rest for a few minutes after cooking. Serve the ribeye steaks alongside the roasted fingerling potatoes and sautéed green beans. Garnish with chopped fresh cilantro.
