Make the Dough

In a large mixing bowl, combine warm water, brown sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy. Add the flour and salt, and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

Let the Dough Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Shape the Pretzel

Preheat your oven to 450°F (232°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

Prepare the Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add the pretzels to the boiling water for about 30 seconds each, then remove and place them on a lined baking sheet.

Egg Wash and Salt

Beat the egg and brush it over the pretzels. Sprinkle coarse sea salt on top.

Bake the Pretzels

Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown.
