Prepare the Shrimp

In a large skillet, heat olive oil over medium heat. Add minced garlic and diced red onion. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.

Cook the Shrimp

Add the shrimp to the skillet and season with salt, black pepper, and chili flakes. Cook for about 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove shrimp from the skillet and set aside.

Make the Cream Sauce

In the same skillet, pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan and Fontina cheese, stirring continuously until the cheese has melted and the sauce is smooth. Adjust seasoning with salt and pepper to taste.

Combine and Serve

Return the cooked shrimp to the skillet and toss to coat them in the creamy cheese sauce. Remove from heat and stir in the chopped cilantro. Serve warm, garnished with extra cilantro if desired.
