Chill and prepare glassware

Place assorted highball and rocks glasses in the refrigerator or fill with ice to chill while preparing ingredients. Keep a small plate of salt for rimming and a citrus juicer and strainer ready.

Make simple syrup

Combine equal parts sugar and water (recommended 120 ml water + 120 g sugar) in a small saucepan, warm gently until sugar dissolves, cool to room temperature and refrigerate. Quantity listed in ingredients is ready-to-use.

Juice citrus

Juice the limes and lemons. You should yield approximately 120 ml lime juice and 40–60 ml lemon juice. Strain to remove pulp and seeds; reserve wedges for garnish.

Cocktails — Don Julio Blanco (Premium Margarita Style)

Build (per cocktail)

Rim a rocks or coupe glass with lime and dip in salt if desired. Add 1 cup (about 120 g) of ice to a cocktail shaker, then add 60 ml Don Julio Blanco, 30 ml fresh lime juice, 15 ml simple syrup. Shake vigorously for 12–15 seconds, then strain into the prepared glass over fresh ice. Garnish with a lime wheel.

Batch (4 servings)

In a pitcher, combine 240 ml Don Julio Blanco, 120 ml lime juice, 60 ml simple syrup, and 1–2 dashes bitters (optional). Stir with ice, then pour into 4 chilled glasses over ice. Garnish each with a lime wheel.

Cocktails — Bulleit Bourbon (Whiskey Highball & Old Fashioned Option)

Highball (per cocktail)

Fill a highball glass with ice. Add 60 ml Bulleit Bourbon, top with 120 ml chilled club soda, stir gently to combine. Add 1–2 dashes Angostura bitters and garnish with a lemon twist.

Old Fashioned (per cocktail)

In a mixing glass, add 1 sugar cube or 7.5 ml simple syrup, 2 dashes bitters and a splash (5 ml) water. Stir to dissolve, add 60 ml Bulleit Bourbon and fill with ice. Stir 20–30 seconds until chilled, then strain into a rocks glass over a large ice cube. Express an orange peel over the drink and drop as garnish.

Batch Highball (4 servings)

In a pitcher, combine 240 ml Bulleit Bourbon and 480 ml chilled club soda. Keep chilled and pour over ice into four glasses when serving; add bitters and lemon twist on each.

Cocktails — Smirnoff Vodka (Vodka Soda & Screwdriver Option)

Vodka Soda (per cocktail)

Fill a highball glass with ice. Add 45 ml Smirnoff Vodka, top with 150 ml club soda or to taste, stir lightly and garnish with a lime wedge.

Screwdriver (per cocktail)

Fill a highball glass with ice. Add 60 ml Smirnoff Vodka and 120 ml orange juice, stir gently and garnish with an orange slice.

Batch Vodka Soda (4 servings)

Combine 180 ml Smirnoff Vodka with 600 ml chilled club soda in a pitcher. Pour over ice into four glasses and garnish with lime wedges.

Service & Timing (11pm–Midnight Premium Hour)

During the Premium Power Hour, promote the three featured options and offer quick builds: Don Julio Margarita (60 ml Don Julio), Bulleit Highball (60 ml Bulleit), and Vodka Soda (45–60 ml Smirnoff). Keep pitchers of batched mixes chilled and prepped (see batch recipes) so each drink can be poured and garnished in under 60 seconds.

Ensure glassware remains chilled, have garnishes pre-cut (lime wedges, lemon twists, orange slices), and keep extra ice on hand to maintain speed. Refill club soda and cola from chilled bottles as needed. Track servings to avoid overpouring: each standard cocktail recipe is sized to yield 8–12 drinks from the provided spirit quantities.
