A European amber lager, medium-bodied with a delicate malt aroma, slight sweetness and a clean, crisp finish.

In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the crushed grains (Pale Malt, Vienna Malt, and Crystal Malt) and maintain the temperature at 152°F (67°C) for 60 minutes.

Mash the Grains

After mashing, sparge with enough water to collect 6 gallons of wort in the brew kettle. Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes, adding Saaz hops in the last 15 minutes.

Sparge and Boil

After the boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal with an airlock and let it ferment at 50°F (10°C) for 2 weeks.

Fermentation

After fermentation, transfer the beer to a bottling bucket, adding priming sugar to carbonate. Bottle and cap the beer, then condition at room temperature for 1-2 weeks.

Conditioning

Refrigerate the bottles for 24 hours before serving. Pour into a glass and enjoy your homemade Vienna Red™!
