Brewing Instructions

1. Prepare the Mash

In a large pot, bring 10 cups of water to approximately 160°F (71°C). Add the malted barley and hold the temperature for about 60 minutes, stirring occasionally.

2. Boil the Wort

After the mash, strain the liquid (wort) into a clean pot. Add 10 cups of water and bring to a boil. Once boiling, add the 2 cups of whole leaf hops for bitterness and boil for 60 minutes.

3. Add Flavorings

In the last 15 minutes of the boil, add grapefruit zest, pine needles, and tropical fruit puree.

4. Cool and Ferment

After the boil, cool the wort rapidly using a wort chiller or ice bath. Once cooled to about 70°F (21°C), transfer to a fermentation vessel and pitch in the yeast. Seal and let ferment for 1 to 2 weeks.

5. Bottle the Beer

After fermentation, add priming sugar to the beer (dissolved in a small amount of water) to carbonate, and then transfer to clean bottles. Seal and let sit for another 1-2 weeks to carbonate.

6. Enjoy!

Chill the bottles, pour into a glass, and enjoy your Sweet Leaf IPA with friends while grooving to some vintage vinyl.
