Prepare the Filling

In a bowl, combine the fresh salmon (cut into small pieces), julienned carrot, cucumber, red bell pepper, chopped cilantro, lime juice, and soy sauce. Mix well and set aside.

Prepare the Spring Roll Wrappers

Soak the spring roll wrappers in warm water for about 10-15 seconds, or until soft. Lay them flat on a clean surface.

Assemble the Spring Rolls

Place a small amount of the salmon filling in the center of each wrapper. Fold the sides over the filling and roll tightly from the bottom up. Seal the edges with a little water.

Fry the Spring Rolls

In a deep pan, heat vegetable oil over medium-high heat. Carefully add the spring rolls in batches and fry until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.

Serve

Serve the crispy salmon spring rolls warm with dipping sauce of your choice.
