Make the Rub

In a small bowl, mix together smoked paprika, ground cumin, garlic powder, onion powder, dried oregano, salt, and black pepper. Rub this mixture all over the flat iron steak, covering it completely. Let it sit for at least 30 minutes to marinate.

Prepare the Chipotle-Lime Sauce

In another bowl, combine chipotle pepper in adobo sauce, lime juice, olive oil, fresh cilantro, and honey. Mix well and set aside.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Once hot, add the marinated flat iron steak and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is reached.

Rest and Serve

Remove the steak from the heat and let it rest for 5 minutes. Slice against the grain and serve with the chipotle-lime sauce drizzled on top.
