Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel. This will help achieve maximum crispiness.
Heat the Oil
In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, avoiding overcrowding. Fry for about 4-5 minutes until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
Season the Fries
While the fries are still hot, sprinkle them with salt, pepper, garlic powder, and paprika. Toss to coat evenly.
Serve
Serve the Pommes Frites hot with ketchup and mayonnaise on the side for dipping.
