On November 14th, 1996 Iron Hill Brewery officially poured its first beer. Among the opening beer lineup was our classic porter, Pig Iron Porter. We’ve paid homage to this long standing Iron Hill staple by aging it on Rye Whiskey Barrels and upping the flavor and alcohol.

In a large mash tun, heat 5 gallons of water to 165°F (74°C). Add the Pale Malt, Crystal Malt, Chocolate Malt, and Roasted Barley. Stir well and maintain the temperature around 150-155°F (65-68°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water (170°F or 77°C) to collect around 6 gallons of wort.

Sparging

Bring the wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter and let it ferment for about 1-2 weeks at room temperature.

Fermentation

After fermentation, transfer the beer to a secondary fermenter and add the rye whiskey. Allow it to age for 2-4 weeks to develop the flavors.

Aging

Once aged, bottle the beer with priming sugar to carbonate. Allow it to carbonate for another 1-2 weeks before enjoying.
