Brewing Instructions
1. Mashing
Heat 3.5 gallons of water to 165°F (74°C) and add the crushed pale malt, flaked oats, and wheat malt. Maintain the temperature at 152°F (67°C) for 60 minutes.
2. Sparging
After mashing, sparge the grains with 2.5 gallons of water at 170°F (77°C) to collect around 6 gallons of wort.
3. Boiling
Bring the wort to a boil. Add Citra hops at the beginning of the boil, Mosaic hops at the 15-minute mark, and Simcoe hops with 5 minutes left in the boil. Boil for a total of 60 minutes.
4. Cooling
Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal with an airlock and ferment at 68-72°F (20-22°C) for about 1-2 weeks.
6. Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of water, boil, and cool. Add it to the beer before bottling to carbonate. Bottle the beer and let it condition for 1-2 weeks.
