Prepare Sweet Potato Puree

Peel and chop sweet potatoes into chunks. Boil in salted water until tender, about 15 minutes. Drain and blend with butter, salt, and pepper until smooth. Set aside.

Make Rainbow Beet Relish

Roast rainbow beets in the oven at 400°F (200°C) for about 30-40 minutes until tender. Peel and dice them, then combine with honey, champagne vinegar, salt, and pepper to taste. Set aside.

Pan Roast Halibut

Season halibut fillets with salt and pepper. Heat olive oil in a pan over medium-high heat. Add halibut fillets, skin-side down, and cook for about 4-5 minutes. Flip and cook for another 3-4 minutes until cooked through.

Prepare Champagne Beurre Blanc

In a small saucepan, simmer champagne vinegar until reduced by half. Whisk in cold butter, one piece at a time, until emulsified. Season with salt and pepper.

Plate the Dish

On a plate, spread a layer of sweet potato puree, top with halibut, add a spoonful of rainbow beet relish, and garnish with baby arugula. Drizzle champagne beurre blanc over the top.
