Influenced by lager styles from Japan, Germany and the American prohibition. This light bodied, golden lager is our original brew, and a national award winning beer in 2023. It has a malt forward backbone that is accentuated by a crisp, dry finish.

Refreshing, golden and a little hazy. Those words depict the perfect summer day just as well as they describe this deliciously drinkable Summer ale. Brewed with grains of paradise and lemongrass, this beer strikes the perfect balance between wheaty warmth and spicy hops, the kind of balance you’d need to surf the waves of a tropical paradise.

In a large pot, heat 6 cups of water to around 160°F (71°C). Add the pale malt and wheat malt, stirring to combine. Maintain temperature for 60 minutes, allowing the grains to steep and release their sugars.

Mashing

After mashing, bring the mixture to a boil. Once boiling, add the hops and Grains of Paradise. Boil for 60 minutes, then add the dried lemongrass in the last 10 minutes of the boil.

Boiling

Cool the wort quickly using a wort chiller or an ice bath. Transfer to a sanitized fermenter and add yeast. Seal with an airlock and let ferment at room temperature for 1-2 weeks.

Cooling and Fermentation

After fermentation is complete, mix the priming sugar with a small amount of water and add it to the beer. Bottle the beer, seal, and let it carbonate at room temperature for another 1-2 weeks.

Bottling

Chill the bottles in the fridge, pour into a glass, and enjoy your refreshing Mahalo, Apollo! Summer ale.
