Influenced by lager styles from Japan, Germany and the American prohibition. This light bodied, golden lager is our original brew, and a national award winning beer in 2023. It has a malt forward backbone that is accentuated by a crisp, dry finish.

Brewed with more than twice the usual hops, this Double IPA is a hop hero of sorts. First, you’ll taste notes of citrus, tropical fruit, and pine. Then, that craveable bitterness swoops in. So strong, so powerful, this beer might just be your, well, let’s just say weakness.

In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the pale malt and caramel malt, maintaining the temperature at 152°F (67°C) for 60 minutes.

Mashing

After mashing, remove the grains and bring the wort to a boil. Once boiling, add 2 oz of Citra hops and boil for 60 minutes.

Boiling

In the last 15 minutes of the boil, add 1 oz of Simcoe hops and 1 oz of Mosaic hops.

Late Hopping

Cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal with an airlock. Ferment at around 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in 2 cups of water and boil for 5 minutes. Cool and add to the beer before bottling.

Bottling

Bottle the beer and let it condition at room temperature for 1-2 weeks before refrigerating.
