Straw-colored Farmhouse Ale that features complex citrus fruit flavors and aromatics, which fades to a refreshingly spicy, dry finish.

In a large brew kettle, heat 3 gallons of water to approximately 165°F (74°C). Add the Pale Malt and Caramel Malt, stirring well. Maintain the temperature for about 60 minutes, keeping it around 150°F to 155°F (65°C to 68°C).

Mashing

After mashing, sparge the grains with an additional 2 gallons of hot water to collect the wort in the kettle.

Sparging

Bring the wort to a boil. Add Hallertau hops at the beginning of the boil. After 30 minutes, add the Citra hops. Boil for a total of 60 minutes.

Boiling

After the boil, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the Wyeast 1056 yeast. Seal with an airlock and let it ferment for 1-2 weeks at around 68°F (20°C).

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap it. Allow bottles to carbonate for 1-2 weeks at room temperature.

Bottling

Chill the bottles and enjoy your homemade Homestead™ Farmhouse Ale, with a hint of orange and lemon zest for added citrus flavor.
