Method
Prepare the Catfish
Marinate the Catfish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.
Prepare the Coating
In a shallow dish, mix together cornmeal, flour, cayenne pepper, garlic powder, salt, and black pepper.
Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture until well coated.
Fry the Catfish
Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it shimmers.
Fry the Catfish
Carefully add the coated catfish to the hot oil. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.
Assemble the Tacos
Warm the Tortillas
In a separate skillet, lightly warm the corn tortillas over medium heat until pliable.
Build the Tacos
Place a piece of fried catfish on each tortilla, top with shredded cabbage, sliced radishes, and fresh cilantro. Serve with lime wedges and hot sauce on the side.
