You won’t be able to resist the imperial forces at work in this mouthwatering New England IPA. It overflows with notes of pineapple, mango and citrus from American hops, making it a rebellious force to be reckoned with.

In a large brew kettle, heat 5 liters of water to 70°C (158°F). Add the pale malt, flaked oats, and caramel malt to the kettle, and mash for 60 minutes, maintaining the temperature.

Mashing

After mashing, sparge the grains with water at 75°C (167°F) until you collect about 7 liters of wort in the kettle.

Lautering

Bring the wort to a boil. Once boiling, add the Citra hops and boil for 15 minutes. After 15 minutes, add the Mosaic hops and boil for another 15 minutes. Finally, add the Simcoe hops and boil for an additional 5 minutes.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Let it ferment at around 20°C (68°F) for 1-2 weeks.

Fermentation

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this to the beer before bottling. Bottle the beer and cap the bottles.

Bottling

Let the bottles condition at room temperature for 1-2 weeks before chilling.

Conditioning

Chill the bottles and enjoy your homemade Chewie IPA!
