In a large brew kettle, heat 6 cups of water to 160°F (71°C). Add the Pale Malt, Caramel Malt, and Wheat Malt, stirring well. Maintain the temperature at around 152°F (67°C) for 60 minutes.

Mashing

After mashing, drain the wort into a separate pot and rinse the grains with hot water to extract more sugars.

Lautering

Bring the wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally.

Boiling

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches around 75°F (24°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Add the raspberry puree and sprinkle the ale yeast on top. Seal the vessel and let it ferment for 1-2 weeks at room temperature.

Fermentation

Once fermentation is complete, prepare a sugar solution by dissolving priming sugar in a small amount of water. Add this to the beer before bottling. Bottle the beer and cap securely.

Bottling

Allow the bottled beer to condition for at least 2 weeks at room temperature before chilling and serving.
