Cooking the Catfish

Prepare the Spice Mixture

In a bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt.

Season the Catfish

Rub the spice mixture evenly onto both sides of the catfish fillets.

Cook the Catfish

Heat olive oil in a skillet over medium-high heat. Add the seasoned catfish fillets and cook for 3-4 minutes per side, or until they are blackened and cooked through.

Making Pimento Cheese Grits

Cook the Grits

In a saucepan, bring water to a boil. Add grits and salt, reduce heat, and simmer for about 20 minutes, stirring occasionally.

Mix in Cheese and Pimentos

Once the grits are thickened, stir in butter, cheddar cheese, and pimento peppers until well combined.

Braised Collards

Sauté Garlic

In a large pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.

Cook Collards

Add chopped collard greens and chicken broth. Cover and simmer for about 30 minutes until collards are tender. Season with salt and black pepper.

Preparing Stewed Tomatoes

In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.

Stir in diced tomatoes, salt, black pepper, and basil. Let simmer for about 15 minutes.
