Method
Preparation of Fries
Cut the Potatoes
Peel and cut the russet potatoes into thin shoestring fries.
Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Preparation of Fish
Make the Batter
In a bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer while whisking until smooth.
Heat the Oil
In a deep fryer or large pot, heat oil to 375°F (190°C).
Batter the Cod
Dip each piece of cod into the batter, allowing excess to drip off.
Fry the Cod
Carefully place the battered cod in the hot oil. Fry for 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Preparation of Tartar Sauce
Combine Ingredients
In a bowl, mix together mayonnaise, chopped dill pickles, lemon juice, chopped capers, salt, and black pepper. Adjust seasoning to taste.
Serving
Plate the Dish
Serve the beer-battered cod alongside the shoestring fries. Add a side of tartar sauce and garnish with lemon wedges.
