Preparing the Brisket

Season the Brisket

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this seasoning mixture all over the brisket, making sure to coat it evenly. Let it sit at room temperature for about 30 minutes to an hour.

Prepare the Smoker

While the brisket is resting, prepare your smoker. Preheat it to 225°F (107°C) and add the wood chips to the smoker box or directly onto the coals.

Smoke the Brisket

Once the smoker is at temperature, place the brisket fat-side up on the grill grate. Close the smoker lid and smoke the brisket for approximately 1.5 to 2 hours per pound, or until it reaches an internal temperature of 195°F (90°C).

Rest the Brisket

Once the brisket is done smoking, remove it from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

Prepare the Coleslaw

In a large bowl, combine the coleslaw mix with your favorite dressing. Toss well to coat and refrigerate until ready to serve.

In a saucepan over medium heat, warm the baked beans until heated through. Stir occasionally to prevent sticking.
