Prepare & Season Protein
If using chicken or pork, cut into small 1/2-inch pieces. If using ground beef, leave as is. Pat the protein dry with paper towels. In a small bowl mix kosher salt, black pepper, chili powder, ground cumin, paprika, garlic powder and onion powder.

Cook Protein
Heat 1 tsp vegetable oil in a small skillet over medium-high heat until shimmering. Add the protein in a single layer. For ground beef: break up and cook 4–5 minutes until browned and cooked through. For diced pork or chicken: cook 5–7 minutes, stirring occasionally, until browned and cooked through (internal temp for chicken 165°F/74°C, pork 145°F/63°C).

Season & Finish
Sprinkle the spice mixture over the cooking protein, add 2 tablespoons water, and stir to combine. Continue cooking 1–2 minutes until water evaporates and spices coat the meat. Remove from heat and stir in 1 tablespoon fresh lime juice. Taste and adjust salt if needed.

Warm Tortilla
Heat a dry skillet over medium heat. Lightly brush the tortilla with 1 tsp cooking oil or spray. Place tortilla in the skillet and warm 30–45 seconds per side until pliable and lightly charred in spots. Alternatively, warm on an open flame for a few seconds per side or wrap in a damp paper towel and microwave 15–20 seconds.

Assemble Taco
Place the warmed tortilla on a plate. Spoon the cooked protein (all of the cooked amount) down the center of the tortilla. Sprinkle 1 oz shredded cheese over the hot protein so it melts slightly. Top with 1/4 cup shredded cabbage, 2 tsp diced onion, 1 tsp chopped cilantro and 1 tbsp salsa or pico de gallo.

Finish & Serve
Squeeze the lime wedge over the assembled taco to taste. Serve immediately while warm.
