Make strawberry-rose syrup ahead: combine 1 cup hulled chopped strawberries, 1 cup sugar, 1 cup water and 1 tsp culinary rosewater in a small saucepan. Bring to a gentle simmer until sugar dissolves and strawberries soften (about 6–8 minutes). Remove from heat, steep 10 minutes, then strain through fine mesh, pressing solids to extract liquid. Cool and refrigerate. Yields about 1 to 1 1/4 cups.

Prepare syrup (if not using store-bought)

If using egg white, add gin, rosé wine, strawberry-rose syrup, lemon juice, elderflower liqueur, egg white, and a dash of orange bitters to a cocktail shaker without ice. Seal and shake vigorously for 12–15 seconds to emulsify and create a silky foam.

Dry shake

Add a handful of ice to the shaker and shake hard for 10–12 seconds until well chilled and slightly frothy (or skip the dry shake and do a single shake with ice for 15–20 seconds if not using egg white).

Wet shake

Double-strain the cocktail into a chilled coupe or flute using a Hawthorne and fine mesh strainer to remove ice shards and any solids. Top gently with ~1 oz club soda to add a light effervescence and lift the flavors.

Express a lemon twist over the drink if using, then discard or place on the rim. Garnish with a thin strawberry slice and a single edible rose petal laid on the foam or floated on the surface.

Finish

Serve immediately while effervescent and chilled. The cocktail is medium-bodied and fruit-forward; adjust sweetness by reducing the strawberry-rose syrup to 1/2 oz for a drier style or increasing to 1 oz for more fruit-forward sweetness.

If you prefer a non-alcoholic version, substitute gin and elderflower liqueur with 3 oz chilled non-alcoholic botanical spirit and keep rosé replaced by a non-alcoholic rosé-style sparkling beverage; follow same build and garnish.
