    Prepare matcha

    Sift 1 teaspoon ceremonial-grade matcha powder into a small bowl to remove any clumps. Add 1 ounce cold water and whisk vigorously with a small whisk (or a fork) until the matcha is fully dissolved and a smooth, slightly frothy slurry forms (about 20–30 seconds).

    Dry shake (if using egg white)

    If using egg white for a silky foam, add 1/2 raw egg white to a cocktail shaker. Pour in the matcha slurry, 2 oz Ford's Gin, 3/4 oz fresh lemon juice, and 1/2 oz simple syrup. Seal the shaker and dry-shake (no ice) vigorously for 15–20 seconds to emulsify and build foam.

    Wet shake

    Add 1 cup of ice to the shaker (or if you skipped the dry shake, add ice and all ingredients now). Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and slightly frosted.

    Strain and serve

    Fill a rocks glass with 3 ice cubes. Double-strain the cocktail through a Hawthorne and fine mesh strainer into the glass to remove ice shards and any matcha bits, pouring slowly to preserve foam on top.

    Garnish

    Express a lemon twist over the drink to release oils, rim the glass with the twist and drop it in. Lightly dust the foam with 1/4 teaspoon matcha powder using a small sieve for an aromatic presentation.

    Serve immediately and advise guests that the cocktail contains raw egg white if used. If you prefer not to use egg white, omit the dry shake step and proceed directly to the wet shake; the drink will be less foamy but still balanced.
