Combine 1.5 cups granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring constantly until the sugar dissolves and the mixture comes to a gentle simmer. Let simmer for 1 minute to slightly thicken, then remove from heat.

Allow the syrup to cool for 10–15 minutes so it is warm but not hot before adding fresh citrus, which preserves bright flavor.

Infuse syrup with lime
While the syrup is still warm, stir in 0.75 cups fresh lime juice and 1 tablespoon lime zest. If using, add 0.5 tsp natural lime concentrate or extract to boost the lime aroma. Stir to combine thoroughly.

Taste the syrup for balance. If it tastes too sweet, add up to 1–2 tablespoons additional lime juice. If it’s too tart, add up to 1–2 tablespoons more sugar and briefly warm to dissolve, then cool.

Strain the syrup through a fine-mesh sieve into a clean jar or bottle to remove zest and any pulp for a clear soda-style syrup. Refrigerate until fully chilled (about 30–60 minutes). Syrup will keep refrigerated for up to 2 weeks.

Assemble the Jarritos-style lime soda
Fill four tall glasses with roughly 1/2 cup ice each (total about 2 cups). For each 8 oz (1 cup) serving, start by pouring 2 tablespoons (30 ml) of the chilled lime syrup into the glass. Adjust syrup to taste (1–3 tbsp).

Slowly top each glass with 1 cup cold club soda or carbonated water to preserve fizz. Stir gently once to mix the syrup and soda without losing carbonation.
