Chicken Wings

Dipping (optional)

Method

Chicken Wings

  1. 1

    Prep and dry

Pat the wings very dry with paper towels. Removing surface moisture helps them crisp. If wings are whole, separate drumettes and flats, discard tips or save them for stock.

  2. 2

    Season and coat

In a large bowl, toss wings with 2 tbsp olive oil, 1 1/2 tsp kosher salt, 3/4 tsp black pepper, 1 tsp garlic powder, 1 tsp smoked paprika, and 1 tbsp baking powder until evenly coated. The baking powder helps the skin crisp in the oven.

  3. 3

    Rest (optional)

For best crispness, place coated wings on a wire rack set over a sheet pan, uncovered, in the refrigerator for 30–60 minutes to air-dry the skin. If short on time, proceed immediately.

  4. 4

    Bake

Preheat the oven to 425°F (220°C). Arrange wings skin-side up in a single layer on a wire rack over a rimmed baking sheet (or on a parchment-lined sheet if you don't have a rack). Bake for 25 minutes, then flip and bake an additional 12–18 minutes until skin is deeply golden and internal temperature reaches 165°F (74°C). Total baking time ~37–45 minutes depending on wing size.

  5. 5

    Make the spicy glaze

While wings bake, melt 3 tbsp unsalted butter in a small saucepan over low heat. Remove from heat and whisk in 1/2 cup hot sauce, 1 tbsp honey, and 1 tbsp fresh lemon juice until smooth and glossy. Taste and adjust: add a pinch of salt if needed.

  6. 6

    Toss wings in glaze

When the wings are done, transfer them to a clean large bowl. Pour the warm spicy glaze over the wings and toss quickly to coat evenly. If you prefer saucier wings, reserve a few tablespoons of glaze to serve on the side.

  7. 7

    Finish and serve

Place glazed wings back on the rack or a platter. Sprinkle with chopped fresh parsley (1 tbsp) for color. Serve immediately alongside fries and dipping sauce.

Spicy Fries

  1. 8

    Prep potatoes

Wash and (optional) peel the potatoes. Cut into 1/4–1/2-inch thick fries (even thickness for even cooking). Place cut fries into a large bowl of cold water and soak for 20–30 minutes to remove excess starch, which improves crispiness.

  2. 9

    Dry and toss

Drain the potatoes and pat completely dry with clean towels. In a large bowl, toss dried fries with 2 tsp cornstarch until lightly coated, then add 1 tsp smoked paprika, 1/2 tsp chili powder, 1/4 tsp cayenne pepper, 1/2 tsp garlic powder, 1 tsp kosher salt, and 1/2 tsp black pepper. Toss so seasonings coat evenly.

  3. 10

    Choose cooking method

Frying: Heat about 3–4 inches of canola or vegetable oil in a heavy pot to 325°F (160°C). Working in batches, fry fries for 3–4 minutes until pale and tender but not brown. Remove and drain on paper towels. Increase oil to 375°F (190°C) and return fries in batches for 1–2 minutes until golden and crisp. Drain on paper towels and sprinkle with a little extra salt. OR Oven method: Preheat oven to 425°F (220°C). Toss fries with 1/4–1/3 cup oil (from the listed 1 cup) to coat. Spread in a single layer on a parchment-lined sheet pan (use two pans if needed). Bake 20–25 minutes, flipping halfway, until golden and crisp; you may need 25–35 minutes depending on thickness and oven. For extra crispness, broil 1–2 minutes at the end while watching carefully.

  4. 11

    Finish and garnish

If fried, while still hot, toss fries lightly with an extra pinch of smoked paprika or cayenne to accent spiciness. Sprinkle with chopped chives or green onions (1 tbsp) if using. Serve immediately alongside wings.

Dipping and plating

  1. 12

Pour 1/2 cup ranch or blue cheese dressing into a small bowl for dipping. Plate wings and spicy fries together; offer extra hot sauce on the side if desired.
