    Prepare chicken

    Trim any fat from the chicken breasts and slice each breast into 3/4-inch wide strips (about 8–10 strips total). Pat the strips dry with paper towels.

    Marinate

    In a medium bowl combine buttermilk and 1 tbsp hot sauce. Add the chicken strips, toss to coat, cover and refrigerate for at least 30 minutes and up to 4 hours (helps tenderize and flavor).

    Set up dredging station

    In a shallow bowl whisk the egg. In a second shallow bowl combine flour, cornstarch, paprika, garlic powder, onion powder, black pepper and 1 tsp salt. In a third bowl combine panko and grated Parmesan (if using).

    Dredge the chicken

    Remove a chicken strip from the buttermilk, letting excess drip off. Dredge first in the seasoned flour mixture, then dip into the beaten egg, and finally press into the panko mixture to fully coat. Place on a wire rack and repeat with remaining strips. For an extra-crisp shell, double-dredge: shake off some panko and repeat egg + panko once more.

    Heat oil

    In a heavy skillet (cast iron preferred) add about 1 cup vegetable oil — enough to come 1/4 inch up the sides. Heat over medium-high until oil reaches 350°F (175°C) or a test cube of bread sizzles and browns in ~30–40 seconds.

    Fry

    Fry chicken fingers in batches without crowding, 3 to 4 minutes per side, until golden brown and internal temperature reaches 165°F (74°C). Adjust heat to maintain oil temperature around 325–350°F. Transfer cooked fingers to a wire rack set over a sheet pan lined with paper towels to drain. Season lightly with a pinch of salt while hot.

    Finish and rest

    Let chicken rest 3–4 minutes before serving to allow juices to redistribute and coating to set. Squeeze lemon wedges over as desired.

Spicy Fries

    Prep potatoes

    Scrub potatoes well (peeling optional). Cut into 1/3- to 1/2-inch thick shoestring or classic fry shapes. Place cut fries into a large bowl of cold water and soak 20–30 minutes (removes starch for crisper fries).

    Par-dry and season

    Drain the potatoes and pat completely dry with clean kitchen towels or paper towels. Place in a bowl and toss with 1 tsp cornstarch (this helps an extra-crisp exterior), smoked paprika, cayenne, garlic powder, 1 tsp salt, 1/2 tsp black pepper and 2 tbsp olive oil until evenly coated.

    Cook method — oven

    Preheat oven to 425°F (220°C). Arrange fries in a single layer on a rimmed baking sheet lined with parchment or lightly oiled. Bake 18–25 minutes, flipping halfway, until edges are crisp and golden. For extra crispness, broil 1–2 minutes at the end while watching closely.

    Cook method — alternative: pan-fry

    If you prefer quicker stovetop fries, heat 2–3 tbsp vegetable oil in a large skillet over medium-high heat. Add fries in a single layer and cook, turning every 2–3 minutes, until browned and crisp, 10–15 minutes total. Drain on paper towels and season with a little extra salt while hot.

    Transfer fries to the serving plate alongside chicken fingers. Taste and adjust salt or cayenne if desired.

Dipping Sauce
