Prepare the batter

In a large mixing bowl, combine chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, and salt. Gradually add water, whisking until you have a smooth batter.

Add vegetables

Fold in the sliced onions and chopped spinach into the batter until they are well coated.

Heat the oil

In a deep frying pan, heat oil over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the pakoras

Using a spoon, drop spoonfuls of the batter-coated vegetables into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per batch.

Drain and serve

Remove the pakoras with a slotted spoon and drain on paper towels. Serve hot with chutney or sauce of your choice.
