Prepare the Ingredients

Chop the onion, tomatoes, garlic, ginger, and mixed vegetables into bite-sized pieces. If using chicken, cut it into small cubes.

Cook the Base

Heat oil in a large pan or wok over medium heat. Add chopped onions and sauté until they become translucent.

Add Aromatics

Stir in the garlic, ginger, and green chilies, and cook for another minute until fragrant.

Add Tomatoes and Spices

Add the chopped tomatoes, turmeric, cumin, coriander, and salt. Cook until the tomatoes soften and blend into a sauce.

Cook the Protein

If using chicken or shrimp, add it at this stage and cook until fully cooked. For tofu, add it later with the vegetables.

Add Mixed Vegetables

Stir in the mixed vegetables and cook for about 5-7 minutes until they are tender but still crisp.

Finish with Garam Masala

Sprinkle garam masala over the dish and mix well. Cook for another minute or two.

Garnish and Serve

Remove from heat, garnish with fresh cilantro, and serve hot with rice or naan.
