Marinate the Chicken

In a large bowl, combine the boneless chicken thighs, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, salt, garam masala, chopped coriander leaves, lemon juice, and water. Mix well to ensure the chicken is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Prepare the Batter

In a separate bowl, mix the gram flour and rice flour. Gradually add water to create a smooth batter that is thick enough to coat the chicken pieces. Adjust the water quantity as necessary.

Heat the Oil

In a deep frying pan, heat the oil over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

Coat the Chicken

Take the marinated chicken pieces and dip them into the batter, ensuring they are well coated.

Fry the Chicken Pakoras

Carefully drop the coated chicken pieces into the hot oil in batches. Fry until they are golden brown and cooked through, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Serve the chicken pakoras hot with mint chutney or your favorite dipping sauce.
