Samosas
Reheat or crisp samosas
If using frozen samosas, follow package instructions to thaw briefly. Heat a large nonstick skillet over medium heat and add 1–2 tablespoons oil. Place samosas flat-side down and cook 3–4 minutes per side until golden and heated through, turning carefully. Alternatively, bake at 200°C (400°F) for 12–15 minutes or deep-fry until crisp. Keep warm on a rack.

If making chutneys from scratch (optional)
For quick tamarind chutney: mix 4 tbs tamarind concentrate or chutney with 1–2 tbs water to desired consistency and adjust sweetness. For green chutney: blend fresh cilantro, mint, 1 small green chili (optional), 1/2 tsp salt and a squeeze of lemon with 2–3 tbs water until smooth.

Prep chickpeas and veg
If using canned chickpeas, rinse and drain well. Toss chickpeas with 1/4 tsp salt, 1 tsp roasted cumin powder, 1/2 tsp red chili powder and 1 tbs lemon juice. Fold in chopped red onion, tomatoes and cilantro. Taste and adjust seasoning.
Assemble
On a large platter or individual plates, place 3 warm samosas per serving (cut each samosa in half on the diagonal if preferred).
Spoon about 2–3 tbs of the dressed chickpeas over each samosa so some spills onto the plate.
Drizzle 2–3 tbs of whisked yogurt over the samosas in a thin, even layer.
Add 1–2 tbs tamarind-date chutney in a zigzag or dollops, then 1–1.5 tbs green chutney over the top for contrast.
Scatter 2 tbs sev (or crushed papdi) evenly over the dish for crunch.
Sprinkle remaining 1 tsp roasted cumin powder, 1 tsp chat masala and additional red chili powder to taste across the plate for seasoning.
Garnish with pomegranate arils, extra sev and fresh cilantro leaves. Serve immediately so sev stays crisp.
