Infuse milk

Pour 4 cups whole milk into a heavy-bottomed saucepan. Add bruised cardamom pods. Warm over medium heat until it begins to steam and small bubbles form at the edges (do not boil). Continue to simmer gently for 10 minutes, stirring occasionally to prevent skin from forming and to reduce by about 10%.

Add saffron

If using saffron, bloom the threads in 2 tablespoons warm milk for 5 minutes, then stir the saffron-infused milk into the simmering milk.

Sweeten and thicken slightly

Lower heat. Stir in 1/2 cup granulated sugar and 1 cup sweetened condensed milk until fully dissolved. Simmer gently for another 8–10 minutes, stirring frequently and scraping the bottom to avoid scorching. The mixture should thicken slightly and coat the back of a spoon.

Finish base

Turn off heat. Remove cardamom pods with a slotted spoon. Allow milk mixture to cool to room temperature (about 30 minutes). Stir in 1 cup heavy cream to enrich the mixture, ensuring a smooth uniform base. Chill in refrigerator until cold, at least 2 hours or overnight for best texture.

Pistachio layer

Prepare pistachio paste

While the milk is cooling (or after), blanch pistachios if they have skins: pour boiling water over them for 1 minute, drain and rub off skins. Pat dry. In a small food processor or blender, combine 1 cup shelled pistachios with 1/4 cup milk and process to a smooth paste, scraping down sides as needed. Add 1 teaspoon green food coloring if you want a brighter green color. The paste should be thick but pourable; add an extra teaspoon of milk if too stiff.

Combine with base

Take about half of the chilled milk base (approximately 2 cups) and whisk it into the pistachio paste until fully combined and smooth. Taste and adjust sweetness; add up to 1 tablespoon sugar if desired. This will be the pistachio kulfi layer.

Optional texture addition

Reserve 1 tablespoon of chopped pistachios to fold into the pistachio mixture for a bit of crunch, if desired.

Mango layer

Prepare mango pulp

If using fresh mangoes, peel and cube ripe mangoes and puree in a blender until smooth to measure 2 cups. If the pulp is very watery, strain briefly to thicken. Stir in 1 teaspoon lemon juice and 2 tablespoons sugar; taste and adjust sweetness so mango is bright but not cloying.

Stabilize (optional)

If you prefer a slightly thicker, less icy mango layer, dissolve 1 teaspoon cornstarch in 1 teaspoon cold water, then stir into 2 cups mango pulp. Warm the mango pulp gently in a small saucepan over low heat, add the cornstarch slurry, and cook for 1–2 minutes until slightly thickened. Cool to room temperature, then chill fully before using.

Combine with base

Mix the remaining chilled milk base (about 2 cups) with the chilled mango pulp until uniform. Taste and adjust for sweetness or acidity. This is the mango kulfi layer.

Assemble & freeze

Prepare molds

Use traditional kulfi molds, popsicle molds, small cups, or a loaf pan. Lightly rinse molds with cold water (do not fill).

Layering

For pistachio-mango marbled or layered kulfi: Pour a layer (about 1/3) of the pistachio mixture into each mold, then a layer of mango mixture (about 1/3), then finish with pistachio or mango so each mold has 2–3 thin alternating layers. If using a loaf pan, pour alternating ribbons and gently drag a skewer through for a swirl effect. Tap molds gently to remove air pockets.

Insert sticks (if applicable)

If using popsicle or kulfi molds with sticks, insert them now. If using small cups, cover with foil and insert wooden sticks through foil to hold upright.

Freeze

Freeze uncovered for 1–2 hours until semi-firm, then cover with lids or plastic wrap to prevent freezer burn. Freeze for at least 8 hours or overnight until fully set (10–12 hours for best texture).

Unmold and garnish

To unmold, dip molds quickly in warm water for 5–10 seconds (do not soak), then gently pull. If in a loaf pan, run a warm knife around edges and invert onto a tray, then slice with a hot knife. Sprinkle with reserved chopped pistachios and garnish with dried mango slices or fresh mango cubes if desired. Serve immediately.
