Tapioca Pearls (Boba)

Boil pearls

Bring 4 cups water to a rolling boil in a medium saucepan. Add 1/2 cup tapioca pearls, stir briefly to prevent sticking, and cover. Cook according to package instructions (typically 6–8 minutes for quick-cook pearls or 25–30 minutes for traditional pearls) until the centers are chewy and pearls are translucent around the edges.

Rest and drain

When pearls reach desired chew, turn off heat, cover, and let sit for 10 minutes (for quick pearls reduce as package directs). Drain pearls in a fine-mesh sieve and rinse briefly with warm water to remove excess starch.

Soak in sugar

Transfer drained pearls to a small bowl and toss with 2 tbs brown sugar while still warm so they absorb sweetness and remain shiny. Keep covered until assembly to prevent drying; pearls are best used within 30–60 minutes.

Brown Sugar Syrup (for panda stripes and sweetening)

In a small saucepan combine 1/2 cup dark brown sugar and 1/4 cup water. Heat over medium, stirring until sugar dissolves and mixture gently simmers. Reduce heat to low and simmer 2–3 minutes until syrup slightly thickens. Stir in 1 tsp light corn syrup if using for extra gloss. Remove from heat and let cool slightly.

To create panda-style stripes in the serving glass, spoon 1–2 tablespoons of warm brown sugar syrup around the inside walls of each glass in vertical drips before adding boba and liquid. The syrup will cling and create dark 'panda' markings.

Brew strong black tea ahead: steep 2 black tea bags (or 2 tbsp loose leaf) in 2 cups boiling water for 6–8 minutes. Remove tea bags or strain leaves and let tea cool slightly. While warm, stir in 3 tbs granulated sugar until dissolved, then chill to room temperature or refrigerate briefly so it won't melt the brown-sugar stripes immediately.

In a pitcher combine 1 cup whole milk and 1/2 cup half-and-half (or use 1.5 cups milk if skipping half-and-half) and 1/2 tsp vanilla extract. Stir to combine. Taste and adjust sweetness by adding up to 1–2 tbs more sugar or some condensed milk if you prefer sweeter.

Assemble drink

Place 3–4 tablespoons of the prepared tapioca pearls into the bottom of a 16 oz serving glass. Add a few ice cubes (about 1/3 cup). Pour 2–3 tablespoons of cooled brewed tea over the boba and ice to help settle. Then slowly pour milk mixture (about 1 cup) into the glass. Top with remaining brewed tea (about 1/4–1/2 cup) to create a layered look. Swirl gently if desired — the brown sugar syrup stripes will remain visible for a 'panda' aesthetic.

If you want deeper black accents, dust 1 tsp black cocoa powder on the inside rim or mix into a spoonful of brown sugar syrup and brush a few more stripes before serving. Optionally drizzle 1 tbsp sweetened condensed milk on top for extra richness.

Serve immediately with a wide bubble tea straw and a mint leaf garnish if using. Stir before drinking to distribute pearls and syrup.
