Marinated Cauliflower Florets

Prepare cauliflower

Wash and thoroughly dry the cauliflower. Cut into uniform bite-size florets so they cook evenly (about 1–1.5 inch pieces). Pat dry with paper towels to remove surface moisture so marinade adheres.

Make marinade

In a large bowl, whisk together hung yogurt and crumbled paneer or cream cheese until smooth. Add grated ginger, garlic paste, minced green chili, cardamom powder, ground coriander, cumin powder, crushed kasuri methi, lime juice, salt, black pepper and 1 tablespoon olive oil. Mix until fully combined and creamy.

Marinate florets

Add the cauliflower florets to the marinade and toss until each floret is evenly coated. Cover and refrigerate for at least 30 minutes, preferably 1–2 hours. For best flavor, you can marinate up to 4 hours. If marinating longer than 1 hour, stir once halfway through to recoat.

For Chargrilling / Cooking

Preheat grill or skillet

Preheat a charcoal grill, gas grill, or grill pan/skillet to medium-high heat (about 400°F / 200°C). If using a broiler/oven, preheat the broiler and place an oven rack about 6 inches from the element. Oil the grill grates or the pan lightly.

Chargrill the florets

Thread marinated florets onto metal skewers or wooden skewers soaked in water (to prevent burning) in small clusters to create 'gol gappe' style bites. Place skewers on the hot grill or grill pan. Cook for 3–4 minutes per side, turning to get even char and golden spots. Baste lightly with vegetable oil or ghee while grilling to encourage browning and prevent sticking. Total grilling time should be 8–12 minutes until edges are charred and florets are tender-crisp. If using broiler, arrange skewers or a parchment-lined sheet with space between florets and broil, turning once, until charred (watch closely to avoid burning).

Finish

If desired, brush with a little butter in the final minute for sheen and extra flavor. Remove from heat and let rest 2 minutes so juices settle.

Garnish & Serving

Plate the chargrilled cauliflower 'gol gappe' on a serving platter. Sprinkle chopped cilantro, sliced red onion and pomegranate arils over the top. Dust with chaat masala and roasted cumin powder, adjusting to taste.

Serve immediately with lemon wedges and bowls of mint chutney and sweet tamarind chutney for dipping. For a street-food style presentation, serve on small plates or in hollowed puris/mini hollow shells if you want a playful bite-sized serving.

Leftovers: Refrigerate cooled cauliflower in an airtight container up to 3 days. Reheat briefly under a hot broiler or in a skillet to refresh char.
