Prepare the fish

Rinse the sea bream under cold water and pat very dry inside and out with paper towels. Make 2–3 diagonal cuts on each side of the fish, about 1/4-inch deep — this helps even cooking and allows seasoning to penetrate.

Season

Season the cavity and both sides of the fish with 1 tsp of the fine sea salt and half the black pepper. Allow to rest at room temperature for 10–15 minutes while you prepare other components.

Make the dredge

In a shallow tray, whisk together the all-purpose flour, cornstarch, remaining 1 tsp salt, remaining black pepper, smoked paprika and garlic powder until evenly combined.

Coat the fish

Lightly dust each fish in the seasoned flour mixture, pressing gently so flour adheres in the slashes and along the skin. Shake off excess; the coating should be thin — this is a shallow-fry, not a heavy batter.

Heat the pan

In a large heavy skillet (cast iron or stainless steel) heat 1 cup neutral oil over medium-high heat until shimmering but not smoking (about 350–375°F / 175–190°C). If using, add 1 tbsp butter to the pan and swirl to melt — this adds flavor but is optional.

Shallow-fry the sea bream

Carefully lay the fish in the pan (do not overcrowd; fry one at a time or use two pans). Fry for 4–6 minutes on the first side until golden and crisp. Using two spatulas (or tongs and a spatula), gently flip and cook the other side 3–5 minutes, until skin is crisp and flesh is opaque and flakes near the bone. Adjust timing for fish size — internal temp around 62°C (145°F) if measured near the thickest part.

Rest

Transfer the fried fish to a wire rack set over a baking sheet or paper towels. Sprinkle lightly with finishing salt and a little black pepper. Keep warm in a low oven (90–100°C / 200–210°F) if needed while you finish other components.

Escovitch (pickled vegetables)

Prepare vegetables

Combine the julienned carrot, sliced red onion, sliced bell pepper and sliced chile in a heatproof bowl or jar.

Make pickling liquid

In a small saucepan, combine the white vinegar, water, brown sugar, vegetable oil, thyme sprigs, pimento/allspice berries, peppercorns and 3/4 tsp salt. Bring just to a simmer over medium heat, stirring until the sugar dissolves and aromatics release, about 2–3 minutes. Remove from heat.

Pickle

Pour the hot pickling liquid over the prepared vegetables so they are submerged. Let cool to room temperature, then cover and refrigerate for at least 30 minutes (ideally 2 hours) to develop flavor. Escovitch can be made a day ahead; bring to room temperature before serving.

Tartar Sauce

Mix sauce

In a small bowl, combine mayonnaise, chopped dill pickle, chopped capers, minced shallot, chopped parsley, Dijon mustard, lemon juice, salt and black pepper. Stir until smooth and taste — adjust lemon, salt or mustard to preference. Chill until ready to serve.

Finishing & Service

Grill lemons

While fish rests, preheat a grill pan or heavy skillet over medium-high heat. Place lemon halves cut-side down and grill 2–3 minutes until char marks appear and lemons are warmed through. This softens the flesh and concentrates flavor.

Plate

On each plate, place a portion of escovitch vegetables next to a fried sea bream. Spoon 1–2 tbsp tartar sauce to the side or in a small ramekin. Add a grilled lemon half and sprinkle chopped parsley/cilantro over the fish and vegetables. Serve immediately so the fish stays crisp.

Serve

Encourage diners to squeeze grilled lemon over the fish, adding escovitch on the side or piled lightly over the fish for a bright, tangy contrast to the crisp fried skin.
