Rinse and soak
Rinse the dal under running water until the rinse runs clear. Soak for 15–30 minutes to reduce cooking time (optional).
Cook dal
Combine rinsed dal, 4 cups water, turmeric, and half the salt in a heavy-bottom pot or pressure cooker. If using stovetop: bring to a boil, reduce heat to a simmer, cover, and cook 30–35 minutes until very soft, stirring occasionally and adding more water (up to 1 cup) if it thickens too much. If using a pressure cooker: cook on medium-high until 3–4 whistles, then reduce heat and simmer 8–10 minutes; allow pressure to release naturally. Skim foam during the first few minutes of boiling, if present.
Mash and adjust consistency
Once dal is soft, mash lightly with a spoon or whisk to break down some lentils and create a creamy texture. Add more hot water 1/4 cup at a time to reach a medium consistency (not too thick, not watery). Adjust salt to taste. If using tomatoes, stir them into the cooked dal and simmer 3–5 minutes to soften and integrate.

Heat fat and spices
In a small frying pan or ladle on medium heat, warm the ghee or oil until shimmering. Add cumin seeds and let them sizzle for about 10–15 seconds until aromatic and slightly darker.
Add powdered spices
Lower the heat slightly and add asafoetida, red chili powder, and garam masala. Stir for 10–15 seconds so the powdered spices bloom in the oil; this releases their fragrance. Remove from heat to prevent the spices from burning.
Finish and serve
Stir in the chopped cilantro and lemon or lime juice. Taste and adjust seasoning (salt, lemon) as needed. Serve hot with steamed rice, roti, or naan.
