Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

Dry shake (if using egg white)

In a cocktail shaker, combine gin, fresh lemon juice, violet liqueur, simple syrup, and egg white (if using). Seal the shaker and shake vigorously without ice for 10–15 seconds to build a frothy emulsified foam.

Wet shake

Add a large handful of ice to the shaker. Shake vigorously for 12–20 seconds until the shaker is well chilled (exterior becomes frosty) and the mixture is well aerated.

Strain

Discard ice or remove the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe using both the shaker strainer and a fine mesh strainer to ensure a smooth, velvety texture.

Top (optional)

If you like a sparkling finish, gently float about 1 oz of chilled dry sparkling wine on top by pouring slowly over the back of a spoon.

Garnish and finish

Add a single edible flower or a lemon twist to the foam. If desired, add one dash of Angostura bitters on the foam and gently swirl with a toothpick to create a subtle pattern.
