Rinse the whole urad dal (and rajma if using) under cold water until the water runs clear. Soak them in 3 cups of water for at least 6–8 hours or overnight.

After soaking, drain and rinse the lentils/beans. Transfer to a heavy ovenproof pot, slow cooker insert, or an electric slow cooker.

Add 4 cups fresh water, the bay leaf, black peppercorns, chopped regular ginger, slit green chili (if using), and whole garlic cloves to the pot. Stir to combine.

Cook very gently overnight: in a low-temperature oven (100–110°C / 210–230°F) for 6–8 hours, or in a slow cooker on low for 6–8 hours, until the dal is tender and has started breaking down but still retains some body. Check once or twice and add up to 0.5–1 cup additional water if it looks too dry. Skim any foam that forms.

Black ginger & garlic infusion

When the dal is nearly done (last 45–60 minutes of cooking), prepare the black ginger and garlic infusion. In a small blender or food processor, combine the black ginger (or blackened ginger paste) with 6–8 of the cooked garlic cloves taken from the pot and 1–2 tablespoons of the dal cooking liquid. Blitz until smooth to a paste.

Stir this black ginger–garlic paste back into the pot of cooked dal. Taste for seasoning and continue to simmer gently so the flavors meld while you prepare the tempering.

Tempering & Finish

In a skillet over medium heat, melt the ghee and butter together. Add the finely chopped onion and cook, stirring occasionally, until golden brown and caramelized, about 10–12 minutes. If the pan gets too dry, add a teaspoon of water to deglaze and continue browning.

Build the masala

Add the tomato puree and tomato paste to the caramelized onions. Cook for 4–5 minutes until the tomato cooks down and the oil begins to separate. Stir in turmeric, red chili powder, ground coriander, and salt. Cook another 2 minutes to remove raw spice flavors.

Add the onion–tomato masala to the pot of slow-cooked dal. Stir thoroughly to incorporate. If the dal is very thick, add 0.25–0.5 cup hot water to reach a creamy, slightly gravy-like consistency typical of dal makhani.

Simmer the combined dal and masala gently for 15–20 minutes over low heat to let the flavors marry. Mash a few of the lentils against the side of the pot with the back of a spoon for a creamier texture.

Stir in the heavy cream and yogurt (if using) and simmer for another 3–5 minutes; do not boil vigorously after adding cream. Add garam masala and crushed kasuri methi, stir and taste; adjust salt and add lemon juice to brighten the dish.

Finish by adding the reserved roasted garlic cloves (optional: lightly crushed) for pockets of roasted garlic flavor and fold in the freshly chopped cilantro.

For an extra glossy finish, melt a touch more butter (about 1 teaspoon) and swirl over the top before serving.
