Bloom coffee and combine dry flavors

In a small heatproof bowl, combine the instant coffee granules and unsweetened cocoa powder. Add 1 tablespoon of warm (not boiling) water and stir until the coffee dissolves and the cocoa forms a smooth paste. This releases the coffee flavor and prevents grit in the final liqueur.

Mix cream and condensed milk

In a medium mixing bowl or pitcher, pour in the heavy cream and sweetened condensed milk. Whisk gently until thoroughly combined and smooth, about 20–30 seconds. Make sure there are no lumps from the condensed milk.

Add flavorings

Whisk the dissolved coffee-cocoa paste into the cream mixture. Add the vanilla extract and almond extract (and optional chocolate syrup and pinch of salt if using). Stir until evenly incorporated.

Incorporate whiskey

Slowly pour the Irish whiskey into the cream mixture while stirring constantly to create a uniform emulsion. Taste and adjust: add an additional 1–2 tablespoons of whiskey if you prefer a boozier finish, or more chocolate syrup for sweetness and depth.

Rest and chill

Transfer the finished Baileys to a clean glass bottle or airtight container. Seal and refrigerate for at least 4 hours (overnight is best) to allow the flavors to meld and the texture to settle. Shake gently before each use.

Serve and store

Serve chilled over ice, in coffee, in cocktails, or in desserts. Store refrigerated and consume within 2 weeks for best flavor and safety. Shake before serving — separation can occur naturally.
