Method
Saffron risotto rice
Bloom saffron
Place saffron threads in a small bowl and pour 2 tablespoons hot water over them. Let sit for 5–10 minutes to release color and aroma.
Warm the stock
In a saucepan, bring the stock to a gentle simmer and keep it just below a simmer over low heat. Keep warm while cooking rice.
Sweat onion
Heat 1 tablespoon olive oil and 1 tablespoon butter in a heavy-bottomed saucepan over medium heat. Add the finely chopped onion and a pinch of salt. Cook, stirring often, until translucent and soft but not browned, about 5–6 minutes.
Toast rice and deglaze
Add the rice to the pan and stir for 1–2 minutes so each grain is coated and slightly toasted. Pour in the white wine and stir until mostly absorbed.
Cook risotto
Add a ladle (about 1/2 cup) of warm stock to the rice and stir continuously until absorbed. Continue adding stock, a ladle at a time, stirring frequently, for about 18–20 minutes, until rice is creamy and al dente. With the last additions, stir in the bloomed saffron and its liquid to distribute color and flavor evenly.
Finish risotto
Remove the pan from heat. Stir in 1 tablespoon butter and 3/4 cup grated Parmesan. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Taste and adjust seasoning. Spread the risotto on a rimmed baking sheet or shallow dish to cool quickly to room temperature (about 30–45 minutes) — faster cooling helps form firm arancini without gummy rice.
Pistachio filling & mix
Prepare pistachios
Reserve 1/4 cup whole pistachios for garnish if desired. Pulse the remaining shelled pistachios in a food processor to a coarse crumb — some small pieces should remain for texture, about 10–12 short pulses. Transfer 1/2 cup of the processed pistachios to a small bowl for mixing into the coating (if using).
Make filling
In a bowl, combine 1 cup coarsely chopped pistachios (or the roughly chopped processor output), 1/2 cup mascarpone or ricotta, 1 teaspoon lemon zest, 1/4 teaspoon salt, and 1 tablespoon finely chopped parsley (if using). If using chopped ham/prosciutto, fold in 1/2 cup now. Mix until a cohesive, slightly firm filling forms. Taste and adjust salt/lemon. Chill in the refrigerator for 10–15 minutes to firm slightly — this makes portioning easier.
Shaping
Portion risotto
Using slightly wet hands, scoop about 2 heaping tablespoons (approximately 1.5 ounces by volume) of cooled risotto into your palm and flatten into a small disk about 2–2.5 inches across.
Add filling and shape
Place about 1 tablespoon of the chilled pistachio filling in the center of the rice disk. Fold rice up around the filling, pressing gently but firmly to seal and shape into a round ball (or pear/teardrop shape if preferred). Roll between your palms to make a smooth, compact arancino. Repeat until all risotto and filling are used; this recipe yields about 12 medium arancini.
Chill formed arancini
Place shaped arancini on a tray lined with parchment and chill in the refrigerator for at least 20 minutes to firm prior to breading. For easier handling, you can freeze them on the tray for 20–30 minutes (do not fully freeze) then bread.
Coating and frying
Prepare breading station
Place 1 cup flour in a shallow dish and season lightly with 1/4 teaspoon salt. In a second dish, beat 2 large eggs with 2 tablespoons cold water until smooth. In a third dish, combine 2 cups breadcrumbs with 1/2 cup finely ground pistachio (optional) and 1/4 teaspoon salt; mix well.
Bread the arancini
Working in batches, dredge each chilled arancino in flour, shaking off excess. Dip into the egg wash, then roll thoroughly in the breadcrumb-pistachio mixture, pressing gently so breadcrumbs adhere. For an extra-crisp double coating, chill for 10 minutes and repeat egg and breadcrumb steps once more.
Heat oil
Pour about 3 inches (roughly 6 cups) of neutral oil into a deep, heavy pot. Heat oil to 350°F (175°C) — if you don't have a thermometer, test with one breadcrumb that should sizzle and brown in about 45–60 seconds.
Fry arancini
Fry a few arancini at a time (do not overcrowd) for 3–4 minutes, turning gently with a slotted spoon so they brown evenly and reach an internal temperature of at least 165°F (74°C). They should be golden brown and crisp. Remove to a paper towel-lined tray and immediately season lightly with the 1/2 teaspoon salt.
Keep warm
If making large batches, keep finished arancini warm in a single layer on a baking sheet in a 200°F (95°C) oven while you finish frying the rest.
