Method
Strawberry Cello Base
Macerate Strawberries
Place the 3 hulled, sliced strawberries in a mixing glass or small bowl. Add 0.5 oz simple syrup and 2 tablespoons strawberry cello. Gently muddle 8–10 times until fruit releases juices but still has some texture.
Strain (optional)
If you prefer a smoother cocktail, double-strain the macerated mixture through a fine mesh strainer into a shaker to remove seeds and pulp. For more body and visual interest, skip straining and leave the fruit in the drink.
Spirit & Aromatic
Add 0.75 oz Italicus and 0.5 oz fresh lemon juice to the shaker or mixing glass containing the macerated strawberry mixture. Fill the shaker with ice (about 1 cup).
Shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Assemble & Top
Fill a chilled flute or coupe glass halfway with fresh ice (if using a rocks glass) or leave ice out for a proper flute. If you double-strained earlier and are using a flute, do not add ice to the glass.
Strain the shaken mixture into the prepared glass. If using a flute, use a fine strain to keep the texture delicate.
Top gently with 3 oz chilled Prosecco. Pour slowly down the side of the glass to preserve bubbles and create a light, effervescent head.
Garnish with a lemon wheel on the rim and a small strawberry on the lip or floated on top.
Serve immediately. Optionally stir once gently with a bar spoon to integrate the Prosecco without flattening it.
