Method
Classic Cocktail Base (per 1 serving)
Shake
Fill a cocktail shaker with ice. Add 2 oz aged dark rum, 0.5 oz orange liqueur, 0.75 oz fresh lime juice and 0.5 oz simple syrup. Seal and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.
Strain & Serve
Strain the mixture into a chilled coupe or rocks glass over one large ice cube (or without ice if preferred). Garnish with a lime wheel or a flamed orange peel. Serve immediately.
Refreshing Highball Variation (per 1 serving)
Build in a highball glass: add 1.5 oz gin, 0.5 oz fresh lemon juice and 0.5 oz honey syrup over ice. Stir briefly to combine (6–8 gentle strokes). Top with 3 oz club soda. Express a lemon twist over the drink (pinch the peel to release oils) and drop it in as garnish.
Smoky Sipper Variation (per 1 serving)
Stirred cocktail: fill a mixing glass with ice. Add 1.5 oz mezcal, 0.75 oz sweet vermouth and 2 dashes orange bitters. Stir with a bar spoon for 20–30 seconds until well chilled and properly diluted. Strain into a rocks glass over one large ice cube. Express an orange peel over the drink, run it around the rim, and drop it in.
Garnishes & Ice
Ice: use large, clear ice cubes when serving on the rocks to control dilution. For shaken drinks you can use regular ice in the shaker but serve over a large cube to keep the drink cold longer without watering it down quickly. Garnishes: choose lime wheel for the rum-based classic, lemon twist for the gin highball and orange peel for the mezcal sipper. If using flamed peel, hold the peel skin-side toward the flame and quickly press to spray oils over the surface—exercise caution.
Batching (optional)
To batch the Classic Cocktail Base for 8 servings: combine 16 oz aged dark rum, 4 oz orange liqueur, 6 oz fresh lime juice and 4 oz simple syrup in a clean pitcher. Stir until combined and chill. When serving, pour ~4 oz of the batch into a shaker with ice, shake briefly and strain into a glass, or serve 4 oz over ice. Keep refrigerated and use within 48 hours for best freshness.
