Method
Chamomile-honey syrup (prepare ahead)
Infuse
Combine 0.5 cup water and 2 tsp dry chamomile flowers in a small saucepan. Bring to a gentle simmer over medium-low heat, then remove from heat. Cover and steep 10 minutes.
Strain the chamomile infusion through a fine mesh sieve or cheesecloth into a clean container, pressing gently on the flowers to extract flavor. Discard solids.
While the infusion is still warm, stir in 0.5 cup honey until fully dissolved. Cool to room temperature, then refrigerate. Syrup keeps 7–10 days.
Cocktail assembly
Fill a cocktail shaker with ice (about 1 cup).
Add 2 oz Seedlip Spice 94, 0.75 oz fresh lemon juice, and 0.75 oz chamomile-honey syrup to the shaker.
Shake vigorously for 10–15 seconds until well chilled and slightly diluted.
Express a lemon peel over the drink (twist to release oils), run the peel around the rim if desired, then drop it into the cocktail as garnish.
Serve immediately.
