Prepare glass

Chill a tall pint glass or Collins glass by filling it with ice and setting aside while you build the cocktail.

Muddle base aromatics

In a shaker or mixing glass, add the fresh mint leaves and the thin cucumber slice. Gently muddle 4–6 times—just enough to release the mint oils and a touch of cucumber juice without shredding the leaves.

Add spirits and sweetener

Add the gin, fresh lemon juice, honey syrup, and the aromatic bitters to the muddled herbs and cucumber. Add 2–3 large ice cubes to the shaker.

Short shake

Shake vigorously for about 10–12 seconds to chill and combine the ingredients and to dilute slightly.

Remove ice from glass

Discard the ice from the chilled serving glass.

Combine with beer

Double-strain the shaken mixture into the chilled glass over fresh ice (about 1 cup). Slowly top with the pale ale (6 fl oz) poured down the side of the glass to preserve carbonation and create a layered, effervescent top.

Finish and garnish

Give the drink a gentle stir once with a bar spoon to integrate the beer just slightly with the gin mixture (1–2 turns). Slide a lemon wheel onto the rim and slap a mint sprig lightly to release aromatics, then tuck it into the top of the drink.

Serve immediately while the beer is still fizzy. Provide a straw if desired, but the drink is traditionally sipped.
