Soak ingredients

Rinse the rice and urad dal separately until the rinse water runs mostly clear. In two separate bowls, combine rice with the poha and fenugreek seeds and cover with enough water (about 450 ml) to soak; in the other bowl cover urad dal with about 250 ml water. Soak both for 4–6 hours at room temperature (longer in cooler climates).

Grind urad dal

Drain the urad dal, reserving the soaking water. Grind urad dal in a wet grinder or high-speed blender with some reserved soaking water in small batches until it becomes a smooth, light, airy batter — about 6–10 minutes total. Add water sparingly; the consistency should be thick but pourable and slightly ribbon-like when dropped from the spatula.

Grind rice mix

Drain the rice/poha mixture. Grind it with reserved water to a slightly grainy but smooth batter (not as fluffy as urad batter), adding water as needed. Aim for a texture similar to pancake batter but a bit thicker. Combine the rice batter with the urad batter in a large bowl.

Mix and ferment

Mix the combined batter thoroughly with clean hands or a spatula to incorporate air. Add 1 tsp salt, then cover and leave in a warm place to ferment until it doubles in volume and becomes slightly sour — typically 8–12 hours in a warm environment (longer if cool). After fermentation, gently stir the batter down.

Adjust batter consistency

After fermentation, if the batter is very thick, add up to 100 ml water gradually to achieve a thin, pourable crepe-like consistency (similar to heavy cream to single cream). If using semolina for extra crispness, stir in 2 tbsp semolina and let the batter rest 10–15 minutes to hydrate it.

Preheat pan

Heat a flat nonstick skillet, cast-iron tawa, or crepe pan over medium-high heat until hot. Test by sprinkling a few drops of water — they should sizzle and evaporate quickly. Reduce heat to medium just before making dosas.

Season pan

Using a paper towel or brush, lightly grease the hot pan with 1 tsp oil. This initial oil prevents sticking and helps create a crisp edge.

Spread the dosa

Stir the batter gently. Pour a ladleful (about 1/3 to 1/2 cup depending on pan size) in the center of the pan and quickly lift and rotate the pan while using the back of the ladle (or a circular motion with the ladle) to spread the batter outward in a thin, even circle about 8–10 inches (20–25 cm) across. For extra-thin crepe-style crispiness, spread thinner and work quickly.

Cook until crisp

Drizzle about 1/2 tsp oil or ghee around the edges and a few drops on top. Cook on medium heat until the bottom is golden brown and edges lift from the pan, about 1.5–3 minutes. Do not flip; dosa is traditionally cooked only on one side for crispness. If you prefer a slightly softer top, cover for 20–30 seconds to help cook through.

Remove and keep warm

Use a thin spatula to gently lift one edge and peel the dosa off the pan. Fold or roll it and transfer to a plate lined with foil or a clean towel to keep warm and crisp. Repeat greasing the pan lightly between dosas and adjusting heat as needed to maintain an even golden color.

Optional flavor additions

If desired, sprinkle chopped green chilies and cilantro on the dosa immediately after spreading the batter before it fully sets, then press gently with the back of the ladle so they stick. For extra crispiness, make dosas slightly thinner and use a bit more oil/ghee around the edges.
