Method
Preheat oven to 350°F (175°C). Lightly grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper. Put chocolate wafer cookies in a food processor and pulse until fine crumbs form (about 2 cups).
Melt the butter in a small saucepan or microwave until fully liquid. Combine the cookie crumbs, melted butter, granulated sugar, and salt in a bowl and mix until evenly moistened and holds together when pressed.
Press the crumb mixture firmly and evenly into the bottom (and about 1/2 inch up the sides if desired) of the prepared springform pan using the bottom of a measuring cup or glass to compact it. Bake the crust for 8 minutes, then remove and let cool while preparing filling. Reduce oven temperature to 325°F (160°C) if your oven runs hot.
Cheesecake Filling
Bring ingredients to room temperature
Ensure cream cheese, eggs, and sour cream are at room temperature (about 30–60 minutes) to avoid lumps and overmixing.
In a large mixing bowl or stand mixer fitted with the paddle attachment, beat the room-temperature cream cheese on medium-low speed until smooth and creamy (about 2–3 minutes). Scrape down the bowl as needed.
Add the granulated sugar and beat on low-medium until incorporated and smooth (about 1–2 minutes). Do not aerate heavily.
Mix in the sour cream, vanilla extract, and flour on low speed until just combined.
If using chopped semisweet chocolate: melt the chocolate gently in a heatproof bowl over simmering water (double boiler) or in 15–20 second bursts in the microwave, stirring between bursts. Let the chocolate cool slightly to warm (not hot). Temper the melted chocolate into the batter in a slow stream while mixing on low so it disperses evenly. If using finely chopped chocolate unmelted, fold it in at the end.
Fold in the pistachio paste (or ground pistachios + oil) and optional green food coloring until the batter is uniformly tinted and flavored. Taste a small bit to check nut intensity and adjust gently (do not add excessive liquid).
Pour the filling over the cooled crust and smooth the top with an offset spatula. Tap the pan gently on the counter to release any large air bubbles.
Bake cheesecake in the preheated oven at 325°F (160°C) for 50–65 minutes, or until the edges are set and the center still slightly wobbly (a 2-inch area in the middle should jiggle slightly). To reduce cracking, you can bake the cheesecake in a water bath: wrap the outside of the springform pan in two layers of heavy-duty foil and place it in a larger roasting pan. Pour hot water into the roasting pan to come about halfway up the side of the springform pan before baking.
When done, turn the oven off and crack the door open. Let the cheesecake cool in the oven for 1 hour to minimize cracking, then remove and cool to room temperature on a wire rack. Refrigerate for at least 6 hours or preferably overnight to fully set.

Make the ganache
About 30–45 minutes before serving (after cheesecake has fully chilled), place the white chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer (small bubbles at the edge), then pour the hot cream over the white chocolate. Let sit 1 minute, then stir gently until the chocolate is fully melted and the mixture is smooth.
Stir in the pistachio paste (or ground pistachios blended with oil) until fully incorporated. If the ganache seems too thick, add up to 1–2 teaspoons additional warm cream to reach a pourable consistency. Optionally stir in the butter for extra shine and the pinch of sea salt to balance sweetness.
Let the ganache cool until slightly thickened but still pourable (about 10–20 minutes at room temperature). Test the temperature by dragging a spoon across the surface; it should coat the back of the spoon fairly well without running off instantly.
Pour the pistachio ganache gently over the chilled cheesecake, letting it flow toward the edges so it slightly drips over. Use an offset spatula to smooth or create a decorative swirl. Sprinkle the chopped roasted pistachios and chocolate shavings on top, and add a few fresh mint leaves if desired. Chill the finished cheesecake for another 20–30 minutes to set the ganache before serving.
Assembly & Serving
Run a thin knife around the edge of the springform pan to loosen the cheesecake before unlatching the ring. Transfer to a serving plate if desired.
Slice with a hot, clean knife: heat the knife under hot water, wipe dry, and make a single smooth cut; reheat and wipe between slices for clean edges.
Serve chilled or at cool room temperature. Leftovers: keep refrigerated, covered, for up to 4–5 days.
