Prepare glass

Choose a highball or Collins glass. Fill the glass with large ice cubes to chill while you assemble the drink.

Measure spirits and citrus

Discard any meltwater from the glass and add 2 tsp (about 10 ml) Ardbeg Scotch and 1 tsp (about 5 ml) St-Germain elderflower liqueur into the chilled glass. Add 0.5 oz (15 ml) freshly squeezed lemon juice.

Build the drink

Gently stir the Scotch, St-Germain and lemon juice with the ice for 8–10 seconds to integrate and chill the mixture without over-diluting.

Top with ginger beer

Slowly top the glass with 4 oz (120 ml) chilled ginger beer. Pour over the back of a bar spoon if you want to preserve more carbonation and create a gentle layering effect.

Finish and garnish

Give the cocktail one very gentle stir to marry the ginger beer with the base. Add 1 dash Angostura bitters if using for extra aromatic complexity. Garnish with a lemon twist or wheel and optionally a slice of candied or fresh ginger on the rim.

Serve

Serve immediately while effervescent. Provide a short stirring straw so the drinker can adjust dilution and flavor as desired.
