Prepare Strawberry-Basil Purée
Muddle and Purée
Place the hulled strawberries and 4 basil leaves into a small blender or mixing glass. Add the fresh lemon juice and simple syrup. Muddle gently if using a mixing glass, then blitz in a blender or vigorously stir to combine into a slightly textured purée. If you prefer a very smooth texture, strain the purée through a fine mesh sieve into a bowl to remove seeds; otherwise keep pulp for body.
Taste and Adjust
Taste the purée and adjust sweetness or acidity as needed: add up to 0.25 oz more simple syrup for more sweetness or up to 0.25 oz more lemon juice for more brightness. Refrigerate briefly if not using immediately.
Build the Cocktail
Combine with Seedlip
In a cocktail shaker, add the strawberry-basil purée (about 1.25–1.5 oz depending on texture), the Seedlip Grove 42 (2 oz), and 1–2 fresh basil leaves torn to release aroma. Add a handful of ice (about 4–6 medium cubes).
Shake
Shake vigorously for 10–12 seconds to chill and dilute slightly, incorporating the basil aroma into the mix.
Strain into Glass
Fill a highball or Collins glass with fresh ice (use the 1 cup of cubed ice). Double-strain the shaken mixture into the prepared glass to remove large solids and basil bits (use a fine mesh strainer if you kept seeds/pulp).
Top with Soda
Top the cocktail with 3 oz chilled soda water. Gently stir once or twice with a bar spoon to integrate, being careful not to flatten the soda.
Garnish and Serve
Garnish with the reserved basil leaves, a strawberry slice on the rim, and a lemon wheel. Clap the basil between your palms once and tuck it into the drink to release aromatics. Serve immediately.
