Roast the Garlic

Preheat your oven to 400°F (200°C). Wrap the garlic head in aluminum foil with a drizzle of olive oil and a pinch of salt. Roast in the oven for about 30-40 minutes until soft.

Cook the Bacon

In a large skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels, then crumble into pieces.

Prepare the Leeks

Chop the leeks, removing the dark green tops and the root ends. Rinse them thoroughly to remove any dirt. In the same skillet with the bacon drippings, add the leeks and sauté over medium heat until soft, about 10 minutes.

Make the Leek Purée

Once the roasted garlic is cool, squeeze the cloves out of their skins into a blender. Add the sautéed leeks, olive oil, salt, black pepper, and thyme. Blend until smooth.

Combine and Serve

Spread the leek purée on a serving plate, crumble the roasted bacon on top, and sprinkle the goat cheese. Drizzle with a little olive oil and serve warm.
